Hi loves! Just wanted to add a note to today’s post to let you know that TSB is semi-officially going on hiatus until 6/15. I say semi because there’s actually no way I can stay away for two whole weeks, so you can expect a quick update or two here and there in the interim 😉 Seriously though, posting isn’t going to be daily/consistent until after my move is complete. Now that that’s out of the way, let’s talk treats!

Ever had a killer post-dinner craving for something super sweet and decadent? Duh, right. Dessert is a total must, and sometimes a single square of dark chocolate or a peanut butter-stuffed date just doesn’t hit the spot. You want the real dessert experience. A true indulgence. You also {probably} want to stay healthy! That’s where these little recipes come in. They’re quick, easy, and won’t break your calorie bank…AKA amazing. As you guys know, cooking isn’t exactly my forte. Something I rock at, however, is coming up with random, awesome, super-simple sweets. So treat yourself, babes! Here are three of my go-to treats for late-night sweet tooth attacks.

1. Spiced apples.

This is one of the most simple and most comforting recipes ever…all you need is an apple, a dusting of cinnamon, and a pinch of brown sugar to taste. Cut apple, microwave for 1-2 minutes depending on desired tenderness, sprinkle with cinnamon and sugar. Want even MORE?! Top the whole thing with coconut sugar whipped cream or vanilla ice cream for an apple pie-esque experience.

2. Chocolate mousse.

Mousse is one of my favorite desserts, but it also happens to be one of those food items that’s weirdly hard to find. I mean, how many restaurants offer chocolate mousse as a desert option? Not many. WOMP. Luckily, I figured out how to DIY a single-serve of this treat, and the results are beyond. Ingredients: 1 pasteurized egg, white ONLY, 1 tablespoon sugar, and 1 tablespoon cocoa powder. Whisk the egg white and sugar together until firm {if you can turn the bowl upside down, you’re good!} and then gently add in cocoa. Chill in fridge for 15 – 20 minutes and enjoy!

3. Cake batter popsicles.

Guys, these are INSANE. They’re also only ~100 calories per pop. {Read: healthy, no. Low-cal, yes.} Perfect summer treat?! Whip up a batch and see for yourself. You’ll need 4oz of fat-free cream cheese, 4oz of plain or vanilla Greek yogurt, 1/4 of a cup of fat-free milk, and 2 tablespoons of dry, boxed cake mix {I love funfetti!}. Combine all ingredients except cake batter and mix until creamy. Stir in cake mix. Pour the mixture into popsicle molds and place in freezer until set and frozen. Done!
