…Words can’t even begin to express how excited I was to find this recipe. As you probably already know if you frequent this blog, I am by no means a chef. I’m a pretty decent baker, and I can make a mean slice of cinnamon sugar toast, but cooking is just not my jam. That’s why I absolutely LOVE recipes like this one, from Lindsay Runs: It’s two ingredients, takes 25 minutes from start to finish, and tastes AMAZING. Seriously, if you like peanut butter and want a healthy fudge alternative that’s sure to satisfy just about any sweet tooth, it’s a must.
Two Ingredient Peanut Butter Freezer Fudge!
Adapted from a recipe from Lyndsay Runs.
1 baking sheet or pan
2 tablespoons softened virgin coconut oil
1/2 cup Peanut Butter & Co White Chocolate Wonderful peanut butter
Line a baking sheet or dish with parchment paper and set aside. In a large bowl, combine peanut butter and coconut oil. Stir until the mixture reaches a liquid-like consistency. Once fully combined, pour the mixture into the parchment-paper lined sheet/pan. Note: Don’t skip the parchment paper! The first time I made this fudge, we didn’t have any parchment paper around so I tried it without, and getting the finished fudge out of the pan was a mess. Place the sheet/pan into the freezer and let sit for at least 20 minutes to set! Enjoy!
In her original post, Lyndsay notes that she cuts her fudge into bite-sized pieces and places it in a glass container lined with parchment paper for easy storage. To keep the fudge-y consistency, store this in the freezer!
